Apple and Cranberry Asian Slaw

  • 2 small or 1 large Honeycrisp apple sliced thin
  • 1/2 head ea red and green cabbage
  • 1 sliced bell pepper
  • 1/2 thinly sliced cucumber, thin slice red onion
  • anything else you can slice up
  • dressing-zest and juice of 2 limes
  • heaping TBS honey( raw)
  • grated ginger about 1/4 a thumb size
  • Olive oil to combine
  • dried unsweetened cranberries or pomegranate seeds
  • handful of cilantro leaves, no stems

Combine the dressing ingredients in a bowl and whisk in olive oil.  Combine all veggies in a bowl and toss with cranberries or pomegranates a dash of salt,  and if you want to do a nut or seed why not?  Sunflower or pumpkin would be good or slivered almonds too, I like raw nuts for their nutrients.  I tossed this the night before and it was fine but at least 30 minutes before serving.Clean Vegan Salad
